How to make steamed rice cakes

 

This recipe is quick and easy.

Ablo are Togolese Steamed Rice Cakes (they are also called Abolo in Benin). Traditionally made with ground rice that has been soaked in water overnight, this version is easy to make with at home with rice…

For 10 cakes

1 cup rice flour
2~3 tablespoons granulated sugar
1 tablespoons baking powder
1 tablespoons cornstarch
1 tablespoons yeast
1/4 teaspoon salt
1 cup warm water

Mix the water, sugar and heat. Place in a warm place for 15 mins.


Add the rice, baking powder, cornstarch and salt.


Whisk the batter until just smooth. Place in a warm place for 1 hour.


While the mixture is rising, prepare your molds.
After that hour, fill the mold to the 3/4. Let the mixture rise in the mold for another hour.

Bring a steamer with water to running boil.
Working in batches and place the mold in the steamer. Steam for 25 minutes, or until the Ablo have risen and are firm to the touch.

Remove from the molds and enjoy warm or at room temperature. Serve warm with mgbagba, jus de tomate, piment…
