Jollof rice is rice cooked in a spiced and stewed in a flavorful tomato broth. It’s a West African dish that’s a staple in most households.
Ingredients:
Ginger, Garlic, Paprika, Bouillon, Salt, Onion, Parsley, Black Pepper, Cayenne, Cloves, Allspice, Anise, Thyme, Cumin, Curry, bay leaves, African nutmeg

Jollof rice Recipe
Ingredients:
3 tablespoon Jollof Seasoning
4 tbsp cooking oil
1 red bell pepper, diced
1 cup frozen vegetable
1 medium yellow onion, chopped
1 6-oz can tomato paste
3–4 cups low-salt chicken broth, divided (or water)
2 cups Yasmine rice
2 cups plumb tomato puree
salt to taste
Instruction:
Heat oil over medium-high heat in a large heavy oven-ready pot with a lid. Add the tomato paste and onion cook for 10 mins.
Add the tomato puree and the jollof seasoning. Cook for 5 mins.
Add the broth, bring to a boil.
Add the frozen vegetable. Cook, stirring, for 3 minutes until slightly softened and fragrant.
Add the raw rice and stir well so all the grains are coated. Add the chicken back to the pot, along with any accumulated juices.
Bring to a boil. Turn the heat to low and cook for 5 mins.
Serve hot with a side of sautéed greens or a simple green salad.
