Yassa is a spicy dish prepared with onions and either marinated poultry or marinated fish. Originally from Senegal, Yassa has become popular throughout West Africa. Chicken Yassa, prepared with onions, lemon, or mustard.
Ingredients:
Ginger, Garlic, Bouillon, Salt, Mustard, lemon, Onion, Parsley, Black Pepper

Yassa chicken Recipe
Ingredients:
1 chicken
2 tbsp lemon juice
3 tbsp Yassa seasoning
5 big onion
2-5 habanero or scotch bonnet pepper
1/4 cup canola oil
Garnish 1 cup pitted green olives, sliced
Salt to taste
Instruction:
Marinate the Chicken with the Yassa seasoning, lemon, salt to taste, oil and sliced onions in a large glass bowl. Cover bowl with plastic wrap and marinate in the fridge for at least 3 hours or overnight.
Preheat the oven to 375ºF. Separate the chicken pieces from the onion mixture. Grill the chicken.
Add the onion mixture to a sauce pan on medium heat.
Cook, stirring, for about 5 minutes to get the onions hot and cooking. Cover the pot and turn the heat to medium-low. Let the onions cook, stirring occasionally, for about 10 minutes more, until they are soft and starting to caramelize. – add a little water if needed
Add the grilled chicken pieces into the caramelized onions. the heat to medium high and bring the broth to a simmer. Cover the pot and put it in the oven and cook for 7 minutes. Add the habanero pepper (optional)
Serve with fluffy white rice and sliced green olives.
