Piri-piri chicken is a spicy dish with roots in both Africa and Portugal. The dish was created in Angola and Mozambique when Portuguese settlers arrived with chile peppers (known as piri-piri in Swahili). Timing note: The chicken needs to marinate for at least four hours before being grilled.
Ingredients: Cayenne, Garlic, Ginger, lemon, bouillon, paprika, brown sugar, red bell pepper, salt
Use: Lamb, chicken, turkey, beef, or veal.
Piri piri Chicken Recipe
Ingredients:
4 chicken legs (thigh and drumstick), skin on, bone in
4 tbsp Piri piri Seasoning
2 tbsp oil
Instruction:
Marinade the chicken with the Piri piri Seasoning. Adjust salt to taste, cover and refrigerate for an hour.
Prepare the barbecue or heat the oven to 200C/390F and roast the chicken for about 35 minutes, until cooked through, basting with its juices occasionally.
Heat a griddle pan to medium hot, brush the chicken with piri piri, and grill for a few minutes on each side, until just starting to char.
Serve wit some fries and Enjoy!
