They have an exquisite flavor, are smaller in size than many other types of white beans and are the perfect ingredient for a variety of delicious recipes. Just plan your preparation: soak them beforehand and cook them, ideally, in a pressure cooker or slow cooker. They are west African and a U.S. favorite for baked beans and other popular dishes such as soups and purées. They are also an excellent and delicious option for vegetarian or vegan diets.

Doyi beans are an excellent source of cholesterol-lowering fiber, as are most other beans. In addition to lowering cholesterol, Doyi beans’ high fiber content prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia. When combined with whole grains such as brown rice, navy beans provide virtually fat-free high quality protein. But this is far from all Doyi beans have to offer.
