Jollof Fonio
Ingredients
1 kg chicken cleaned
4 tablespoon Meat seasoning
4 tablespoons oil
1 diced onion
1 cup frozen vegetable
1 tomato blended
1 tsp Tomato paste
Salt to taste
1 cup fonio, rinsed
1 teaspoon fresh thyme leaves
salt to taste
Instruction
Season the chicken with the “meat” seasoning in saucepan.
Place on medium heat and bring to a boil. Add water if needed.
Once the chicken is cooked, separate the chicken from the broth.
Fry the chicken and set aside.
To the broth (2 cups), add the blended tomato and onion, tomato paste, chopped onion, frozen vegetables, salt to taste.
Bring the broth to a boil.
Stir in the fonio, cover, and allow to sit for 7 minutes. Uncover and fluff with a fork. Allow to sit for 7 minutes, then fluff with a fork again.
